And what is appropraite to write in them?
I have my six year old write all his thank you notes. I usually just have him write "Dear ___, Thank you for the ____. Love, ___." That's enough for a six year old! But if these are thank you notes for gifts for a person who is older, then something like, "Dear ___, Thank you for the great ____! It was so thoughtful of you to remember me at Christmas. I hope you had a wonderful holiday. Love, ___" would be appropriate. If they gave you cash, never mention the amount in your thank you note. You can just say, "Thank you for the money. I plan to use it for ___."
Send the notes out as soon as you write them, which should be no more than two weeks after Christmas.

My baby was born at the end of August, and she had several showers in Sept. I didn't send out thank you notes yet. Would it be improper to put a Christmas card and thank you note in the same envelope?
I don't think so. Explain that with the arrival of the new baby things got hetic and now that things are a bit calmer, you want to say thank you for the gift and wish all Happy Holidays. Anyone with children will understand I would hope.

A written card is always the right way to thank you
I grew up religious, and we did not celebrate any holidays. I am now married, no longer religious, and we celebrate the holidays with my husbands family and our son of corse. Growing up, my mother also pushed thank you cards, so I am used to sending cards out for everything. At christmas time, our son gets so many things, it is hard to keep straight who gave him what. Is it customary to keep track of things to send everyone out a thank you card for christmas gifts?
You should send a thank you card to everyone who sent a gift. Gifts recieved in person do not require a card.
But it's nice for a gift recieved in the mail, because number one, it lets the person know the gift got there okay, and number two, its just polite.
My grandma has pretty much stopped sending gifts to my cousin because she never wrote a thank-you card.
Sending thank you cards also teaches your son to be grateful and not just expect gifts all the time.

No, people don't normally do it, and it's a shame. Should they? Yes. Any gift should be recognized with a TY card. This is proper etiquette.
After sending gifts for 3 years to friends without ever receiving any kind of thanks (card, call, e-mail), or even any kind of acknowledgment that the gift arrived, I stopped sending them anything.
If you are able to thank them in person when you open it, do you still send a thank you card later?
If you are mailed a gift, do you send a thank you card?
If I receive a gift in person and open it then, I thank the person at the time.
If I receive a gift in person and take it home to open later, then I'll thank them at the time AND call after I've opened it.
If I receive a gift in the mail, and it's wrapped for the holidays, I'll send a brief e-mail acknowledging I received it and then a handwritten note after Christmas.
